Mozzarella in carrozza
PREPARATION
Prepare the bread to toast, as you prefer, removing the crust on all four sides and place it for a few minutes in the beaten eggs mixed with half a glass of milk. Cut the mozzarella into 4 rather high slices and pass them into the eggs, in the flour and then again in the beaten eggs.
Place the mozzarella in the middle of two slices of bread like a “sandwich” and put the whole sandwich in the flour and then in the eggs, pressing the slices of the bread a little. Prepare a pan for frying with plenty of oil, preferably olive one, taking care to fill it at least up to the height of the mozzarella slice, fry until browned on one side, then twist and fry on the other side until the mozzarella will be melted. Drain on absorbent paper and serve your mozzarella in carrozza!
