Raviolo (dampling) with mozzarella di bufala campana DOP

PREPARATION

Sift the flour, add a pinch of salt and mix it with the oil until you obtain a firm and elastic mixture. If it turns out to be sticky, add the flour again, but gradually, so you can check the consistency. Form a ball, wrap it in a film and let it rest for 30 minutes. Meanwhile, peel the tomatoes, remove the seeds and cut the diced pulp, then cut the mozzarella into cubes, at this point mix them together and season with salt and pepper to taste. Pull the dough into a thin sheet. Cut out 8 small disks, maybe use a medium sized glass to get the disks. Place a portion of the filling in the center of the discs, fold them in half and seal the edge by pressing with a fork. Boil a pot of water, pour the ravioli and cook for a couple of minutes. Drain and serve with a drop of oil and Parmesan, or if you wish, you can add a light tomato sauce.
